How To Make Thai Coconut Sticky Rice With Mango
I haven’t been to Thailand and I only know a little about the Thai cuisine. But maybe, it won’t harm if I would try making and eating the most famous Thai dessert and rice cake. The Coconut Sticky Rice with Mango, or locally known as the Khao Niaow Ma Muang, is a traditional Thai dessert made with glutinous rice, fresh mango and coconut milk. It is eaten with a spoon or sometimes with hands. It’s exotic yet scrumptious. I actually enjoy eating mango with rice so why not try this combo that originated from our neighboring country.
1. Prepare all the ingredients needed.
- 2 cups glutinous rice
- mango
- 1 1/4 coconut milk
- 5 tbsp brown sugar
- 1 tsp salt
- 1 1/2 tsp corn starch
2. Wash and cook the glutinous rice.
3. Start making the coconut cream by mixing cornstarch, a tablespoon of brown sugar and a pinch of salt into a half cup of coconut milk.
4. Mix until the solutes dissolve into the coconut milk.
5. Put this mixture on a low heat. Stir constantly until it thickens.
6. Remove from heat and set it aside.
7. Make the sticky rice by mixing three-fourth cup of coconut milk, four tablespoons brown sugar and a teaspoon of salt. Bring this mixture to boil.
8. When the rice is cooked, replace it on a mixing bowl and pour the boiled coconut milk.
9. Cover the rice and let it soak for about half an hour.
10. Slice the mangoes.
11. Assemble the coconut sticky rice and mango on a plate.
12. Pour the coconut cream.
13. Your Thai Coconut Sticky Rice With Mango is now done and ready to be served.
