How I Make Fetal Duck Eggs In Coconut Milk

Yep! I wrote the right title. I’m not kidding! We are really going to cook and eat fertilized developing egg embryo. The boiled fetal duck egg is actually a delicacy and a favorite street food in my country so this isn’t new to us. We call them Balut.
It’s exotic as it may sound but once you try it, you’re just eating an upgraded and more flavorful version of egg. Believe me that it’s addicting. Just don’t mind how its texture feels in the mouth.
Filipinos usually eat Balut directly from the Shell. We just sip each part in every peel. But today, we’ll tweak it a little bit and cook it in coconut milk.
Before we proceed, I have to say something because you’ll notice that we used different cookwares for each photo. My Balut dish recipe was cooked in separate occasions so I the photos were just taken when I caught my mom cooking. I’m sorry for that.

2. Peel and slice the turmeric and garlic.
3. Peel the eggs. To do this, poke a small hole on the narrow end of the shell. I recommend to sip the soup first because that tastes good. Then, peel the rest of the shell gently.
4. In a saucepan, pour coconut oil and place over medium heat.
5. Add the sliced turmeric and garlic and let this simmer.
6. Once it starts to bubble, turn heat to low and bathe peeled balut eggs into the coconut milk.
7. Season with salt and pepper. I forgot to do this while cooking so I just sprinkled salt and pepper when we’re done.
8. Your Balut in Coconut Milk is now done and ready to be served.
