How I Make Spanish Potato Omelette

I’m a fan of Netflix’s Street Food TV Series. Well, actually, I watch almost all Netflix reality shows about food because as a foodie, I naturally enjoy learning about them. Street Food: Asia, Street Food: Latin America and Street Food: USA are few of the documentaries that interest me because I got to explore cultural cuisines and street dishes around the world. Aside from the street food itself, the documentary features street food vendors and their history, which is intertwined with the big picture of how influential street food is on their native country.

The first episode of Street Food: Latin America presents some native chows of Buenos Aires, Argentina, which includes Tortilla de Papa. While the rest of the world knows tortilla as a flatbread, people of Spain and Argentina calls their omelette as tortilla. The said documentary shows how Pato Rodriguez, owner of a street food stand, Las Chicas de las Tres, at Buenos Aires’ Central Market, cooks and serves Tortilla de Papa.

Searching further about this dish, I found out that this potato omelette is actually the national dish of the Spaniards. It is often served as tapa or appetizer. Pato Rodriguez of Argentina tweaked, added cheese and ham and made it a loved street food in Argentina.

1. Prepare all the ingredients needed.

  • 1/4 kilo potatoes
  • 3 eggs
  • 3 garlic cloves
  • butter or oil
  • parsley
  • salt 
  • pepper
  • cheese

2. Wash the potatoes well. I’m using marble potatoes since that’s what I have here but you can use regular potatoes.

3. Slice potatoes into small pieces. Mince the garlic.

4. Sauté garlic in butter or oil.

5. Fry the potato slices until they got crispy sides.

6. Beat the eggs.

7. Pour whisked eggs into the pan with potatoes.

8. Add cheese. You can choose any cheese you like. I just added the remaining cheese I got from our previous charcuterie.

9. Season omelette with salt, pepper and parsley.

10. Your Spanish Potato Omelette is now done and ready to be served.
