How I Make Philippines Eggplant Omelette
After exploring omelettes around the world, I officially declare that Filipinos has the most unique way of making one. No other country has thought of making omelettes with eggplants, not to mention that Filipinos cook it with the eggplant’s stem.
Eggplant Omelette, which is locally known as Tortang Talong, is a common dish for lunch and dinner in the Philippines. Actually, we don’t find it unusual but the foreigners seem to be amused to our omelette, making Tortang Talong a dish to be proud of. It’s delicious and perfect with rice so you should make it some time.
1. Prepare all the ingredients needed.
- 6 eggplants
- 4 eggs
- 2 tbsps fish sauce
- pepper
2. Grill the eggplants to burn their skin. For those who don’t have griller like me, blow torch can be used.
3. Place grilled eggplants in a bowl of ice water. Wait for them to cool down so you can start peeling their skin.
4. Mash an eggplant on a plate without tearing the flesh apart.
5. Beat the eggs and whisk in fish sauce and pepper.
6. Pour the beaten egg mixture onto the plate of mashed eggplant.
7. Pour the whole on a pan with heated oil. Flip to cook each side.
8. Your Tortang Talong is now done and ready to be served.
