How I Make Parmesan Egg Spaghetti
Santa Claus is once again coming to town! This just means preparation of food for Noche Buena!
I don’t want my December 24 today to be like last year. If you would remember, I almost wasn’t able to make a dish for our Christmas Eve because of cooking orders for other families. Today, the rule is not to have work during the holidays and to alot the time with my family.
I plan to make the Italian Carbonara and not the Filipino style. Traditionally, the sauce is made with egg yolks, guanicole and picorino romani. But I can’t say this recipe’s authentic because I’m using available alternatives since it’s hard to get the specific ingredients in my province. We’re more familiar with bacon and parmesan so we’re using them instead.

- 350 grams spaghetti pasta
- 5 egg yolks
- 400 grams parmesan
- Salt
- Pepper
2. Cook pasta in boiling water.
3. Cut bacon into thin slices.
4. Using another pan, render oil from bacon.
5. Once the pasta is cooked, transfer pasta into the pan. Turn to low heat.
6. In a bowl, whisk the egg yolks, parmesan powder, salt and pepper together.
7. Add egg mixture into the pasta.
8. Your Carbonara is now done and ready to be served.
