How I Make Brie Gravy Fries

The process of making this so-called Brie Gravy Fries is similar to poutine, a Canadian dish, emerged in Quebec. However, I am familiar that poutine uses cheese curds and not brie so we cannot really call this poutine. The Canadians might be angry when they read this. But having fries, cheese and gravy on the plate, this dish took inspiration from poutine.

There are no cheese curds in my country at all so it’s impossible for me to make the authentic one. Therefore, I replaced it with my favorite cheese, brie! After all, I’ve seen poutines in various versions and I’ve seen one with brie so I know this is gonna work and this is gonna be awesome.

1. Prepare all the ingredients needed.

  • 1/4 kilo potatoes 
  • 1 brie cheese
  • 1/2 cup butter
  • 5 tbsp flour
  • 2 cups beef stock
  • 1/2 tsp salt
  • 1/2 tsp Pepper
  • 1/2 tsp basil flakes
  • 1/2 tbsp Onion powder
  • 1/2 tbsp Garlic powder
  • oil

2. Cut the potatoes into fries. Slice the brie cheese into cubes.

3. Wash potatoes and dry.

4. Heat oil and deep fry sliced potatoes for seven minutes.

5. Let the fries cool.

6. Place it back to the fryer and cook until crispy.

7. Make the gravy by browning flour into melted butter.

8. Add the beef stock in a gradual manner while stirring.

9. Season with salt, pepper, basil flakes, garlic powder and onion powder.

10. Assemble fries and cheese. Season this with more salt.

11. Pour gravy.

12. Your Brie Poutine is now done and ready to be served.
