How I Make Chinese Prawn Salad
Hot Prawn Salad, or, simply, Shrimp Salad, is a Chinese appetizer we usually make at Filipino homes.
I already knew Hot Prawn Salad when Ninong Ry cooked and included this in his ten ways of cooking shrimps. But I got to fully appreciate the Chinese dish when I got to try Par Nee Restaurant‘s version, which is a Hot Seafood Salad.
The traditional salad includes canned fruit cocktail. But I’m not really a fan of fruit cocktails so I just chose the fruits I prefer for this recipe. You can also have your own fruit selection or stick with fruit cocktail.
1. Prepare all the ingredients needed.
- 1/2 kilo shrimp
- 1/2 apple
- 1 mango
- 1 egg
- 1/4 cup flour
- 1/2 cup mayonnaise
- 1/8 cup condensed milk
- 1/4 cup all purpose cream
- Oil
2. Peel the shrimps. Remove heads and remain tails.
3. Mix flour, egg and a tablespoon of water.
4. Coat shrimps into batter.
5. Deep fry. Strain excess oil.
6. Slice apples and mangoes into small dices. Ditch this step if using canned fruit cocktail.
7. Mix mayonnaise, condensed milk and all purpose cream.
8. Combine fruits and mayonnaise mixture.
9. Fold in the battered shrimps.
10. Your Hot Seafood Salad is now done and ready to be served.
