Fuxion: Where Filipino And Chinese Cuisine Meet In Calapan City
Last 2022, a restaurant called Fuxion let the Filipino and Chinese cuisine meet in Calapan City. As a person with Chinese blood that runs inside me, I was excited to try Fuxion’s food offerings.
Looking at the menu of Fuxion, being the home of Filipino Chinese Cuisine In Calapan City, I still think that the restaurant misses some of the major Chinese food items. Where are the noodles in soup? Where’s the Hainanese Chicken, it they can’t provide the duck? The appetizer section is only limited to potstickers. My husband was sad for not finding his favorite Chinese Beef Brisket. There are a lot of Chinese desserts I could think of and they just offered Halo Halo and other Filipino shaved ice desserts.
Nevertheless, we still continued our dinner in Fuxion. And here are some of the dishes we tried in the restaurant.

I was eyeing the steamed dim sum from the other table. It was served in a bamboo steamer to complete the Chinese feels. I commend them for that. However, my companions opted their deep-fried Pork Dumplings, which wasn’t a bad choice, too. The dumplings had a nice sear, giving it a little crunch. I liked that there were still soft parts from its wrapper so there was a variety of texture. When it comes to the fillings, I must say that the essence of the ginger matched the flavors of the tender and nicely-ground pork.

I was surprised at how fast the serving time was. Just a minutes after we ordered, the hot, hearty and comforting Hototay was placed on our table immediately. I was already satisfied with its flavors but, being a meticulous soup eater that she is, my mom was still looking for something rich. She had set Uncle Jovs’ Hototai as a standard so she was looking for a richer taste. But compared to Uncle Jovs’ Hototai, I guess, Fuxion’s Hototay has more egg drop so I enjoyed it more. Moreover, it is generous in vegetables, meat and pork.

While we prefer a Lechon Kawali that is overfried, I appreciated the doneness of the pork, which left the meat tender and the skin thin and crispy. I love that there were only minimal fats from these big cuts of pork belly. It’s actually amazing to see the meat staying soft when the fats were reduced up to this point. When it comes to taste, it didn’t disappoint. It was flavorful in every bite, especially when dipped in their mildly sweet vinegar mix. I just wished there were more sauce though.
Camaron
Look at how smooth and flawless these battered shrimps were! I nearly thought that they were machine-made. Each shrimps were dipped to batter neatly and were fried to crunchiness. It was almost perfect until I realized how small the shrimps were. But I kinda understand because big shrimps aren’t frequently available in the public market. Despite of the small seafood filling, the breading wasn’t too much. The sweet chili sauce was good. When not dipped into the sauce, the Camaron was quite bland.
Lumpiang Shanghai
Here’s another dish that seemed to be prepared by machine because of how neat the outcome was. Each rolls of Lumpiang Shanghai was sized reasonably. The meat fillings were applied like a paste inside since the pork and vegetables were compact and ground finely inside the crispy thin wrapper. I was surprised that it was still hot even after a few minutes. The sweet and sour sauce was great but its amount wasn’t proportional to the dish. It’s a good thing it was easy to request for more.
Sizzling Tofu
Oooh! It somehow got the flavors of the famous Sizzling Tofu of Max’s. The sauce has a mix of savory, sweet and tangy, making the dish incredible. However, it was kinda dry because the sauce curdled, causing it to unsuccessfully cover the tofu, visually and taste-wise. It also didn’t sizzle when served so it wasn’t as hot as I expected it to be. Thankfully, since they were fried just right, each pieces of tofu were sizable that I could feel their spongy interior. There were plenty of them, too.
Pancit Bihon
The Pancit Bihon wasn’t the watery kind. It may only have a little moisture but the noodles had already infused all the flavors we’re looking for, which is incredible. This had so much flavor that you hardly need the sauce. It had a generous toppings from meat to greens. It wasn’t obvious in the photo because it had a great deal of noodles as well. Generally, the platter is plenty and could cater five persons. It didn’t just satisfy our tummy but it also satisfied the hearts of pancit lovers in the table.
Iced White Mocha
At first sip, I instantly noticed that the coffee tastes diluted. It was like an Americano with milk. Perhaps, there’s too much water when the espresso was brewed. There was just a small hint of bitterness from the coffee. Then, the issue was just covered with white chocolate flavor. But I appreciate the chocolate since it kinda tastes like a chocolate drink I had from somewhere. On the other hand, the Cucumber Lemonade, which was ordered by my companions, was delicious. I like that they kept it as natural as possible.
