How I Make Japanese Cucumber Salad
One of my family’s favorite way of eating cucumber is by turning it into salad, or into Ensaladang Pipino, as we call it. It’s merely composed of sliced cucumber soaked in vinaigrette. I actually wonder why it is so underrated, when, in fact, it can line up with other local salads like Fruit Salad, Buko Salad, Macaroni Salad and Buko Pandan.
Now that I remember it, I searched about this dessert and I’m delighted to find out that Japan has a similar dish. Actually, theirs is more popular globally. Cucumber Salad in Japan and Korea is eaten as a side dish to main meals. We can usually see them with samgyeopsal as well.

- 1 tbsp soy sauce
- 1/2 tbsp salt
- 1/2 tbsp sugar
- 1 tbsp sesame seeds
- furikake
2. Cut cucumber into thin slices.
3. Season with salt and let it rest for five minutes.
4. Rinse.
5. Secrete out the remaining liquid using a clean cloth.
6. Dress with apple cider vinegar, sugar, soy sauce and sesame seeds.
7. Top with furikake.
8. Your Japanese Cucumber Salad is now done and ready to be served.
