Tandoori Chicken

Tandoori Chicken is a popular and flavorful dish originating from the Punjab region of India and Pakistan. I first encountered it while watching the “Mumbai” episode of Netflix’s Somebody Feed Phil, where host Phil Rosenthal explores the world’s diverse culinary traditions. 

Traditionally, Tandoori Chicken is prepared by marinating chicken in a blend of yogurt and aromatic spices, like cumin, coriander, and turmeric, which give it a vibrant red color and deep flavor. Cooked in a tandoor, a clay oven heated by charcoal or wood fire, it has a smoky, charred flavor and tender texture. Today, it’s loved worldwide and can be easily made at home using a grill, oven or air-fryer.

1. Prepare all the ingredients needed.

  • 3 chicken legs
  • 1 thumb ginger
  • 1/2 bulbs of garlic
  • 1/2 tbsp Garam Masala
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tbsp mint sauce
  • 1/2 lemon
  • 1/2 tsp turmeric
  • 50 ml yogurt
  • red food coloring

2. Mince ginger and garlic using presser and place over chicken.

3. Add the garam masala, yogurt, chili powder, salt, mint sauce, lemon, turmeric and food coloring into the chicken.

4. Massage the chicken so it can absorb the marinade.

5. Cook in air-fryer for ten minutes each side at 180 degrees Celsius.

6. Drizzle more mint sauce.

7. Your Tandoori Chicken is now done and ready to be served.
