How I Make Portuguese Bean And Chorizo Pork Stew

Feijoada is more than just a stew. It’s Brazil’s national dish, a comforting and hearty blend of beans, pork, and chorizo simmered to perfection. While it’s most famous in Brazil, it actually traces its origins back to Portugal, where variations of this rich, flavorful dish are also enjoyed.

I first learned about Feijoada while watching the Salvador, Brazil episode of Street Food: Latin Americaon Netflix. At first, I was hesitant to try making it because I wasn’t sure how I’d feel about the bold, earthy flavor of the beans. But when I finally served it for lunch, my family ended up loving it. It’s a proof that sometimes, stepping out of your comfort zone in the kitchen pays off!

Let’s dive into this delicious, slow-cooked masterpiece!

1. Prepare all the ingredients needed.

  • 1/2 kilo Black Beans
  • 1/2 kilo Pork Meat
  • 1/2 kilo Pork Fat
  • 1/4 kilo Chorizo
  • Onion
  • Garlic
  • Bay leaves
  • Beef bouillon 
  • Salt
  • Pepper
  • Celery

2. I already soaked the black beans overnight.

3. Cut the pork and sausage.

4. I started frying the pork fat to render oil.

5. Add the pork meat and chorizo.

6. Slice the onion and garlic and add into the meat.

7. Once the meat becomes brown, pour water into the pot.

8. Mix in black beans, bay leaves, beef bouillon, salt and pepper. Let this simmer for two hours.

9. The sauce will become thick. Top with chopped celery.

10. Your Feijoada is now done and ready to be served.
