How I Make Cheesesteak Gravy Fries

Let’s talk about poutine, a comfort food classic from Canada known for its golden fries, savory gravy, and squeaky cheddar cheese curds. I know this isn’t going to be your classic Canadian version. But when inspiration strikes and when you have wagyu cubes in the fridge, it’s hard to resist putting your own spin on things!

Today, I’m making Cheesesteak Poutine. However, instead of the traditional cheddar cheese curds, I’m using soft cow’s milk cheese. Authentic? Not exactly! Delicious? Absolutely!

This mash-up of cheesesteak and poutine brings together rich, melty cheese, buttery wagyu, and crispy fries drenched in flavorful gravy. It’s indulgent, hearty, and perfect for sharing—or keeping all to yourself. Let’s dive into this delicious experiment!

1. Prepare all the ingredients needed.

  • Steak
  • Potato
  • Cheese
  • Salt
  • Pepper
  • Oil
  • 250ml Beef stock
  • 1/4 stick butter
  • 2 tbsp flour
  • Yakiniku sauce

2. Cut potato in julienne and steak in bite-sized pieces.

3. Season both with salt and pepper.

4. Sear steak in pan. Ribeye steak or sirloin are the best choice for cheesesteaks but I have Saikoro Wagyu cubes so this is what I’ll use.

5. Fry fries in air-fryer.

6. Let’s do the gravy by mixing flour in melted butter over heat.

7. Add the beef stock and let this simmer.

8. Since I got a free yakiniku sauce from the wagyu cubes I bought, I combined half cup of the gravy and half cup of yakiniku sauce. But you can stick to the usual way, which is adding cornstarch onto the gravy.

9. Arrange fries, steak and cheese on a plate or skillet.

10. Pour the Yakiniku gravy on your poutine.

11. Your Cheesesteak Poutine is now done and ready to be served.
