How I Make Arabian Chickpea Croquettes
Usually, croquettes are made of mashed potatoes. But in Mediterranean cuisine, these deep-fried balls are made of chickpeas. Arab countries are main producers of this certain bean so it is no surprise that chickpea croquettes is really a thing in Middle East. In fact, this street food, called Falafel, takes a special place in Israeli cuisine as it is considered to be Israel’s national dish. It’s an ultimate street food in Israel as you can find it in every street corner.
It’s such a shame that I only got to learn Falafel recently when I watched the “Tel Aviv” episode of “Somebody Feed Phil“. At least, I got to recreate it now using the available local ingredients.

- 3 garlic cloves
- 2 tsp coriander
- 2 tsp cumin
- 2 tbsp chives
- Salt
- Pepper
- Oil
2. Drain and wash chickpeas.
3. Process chickpeas, garlic, coriander, cumin, chives, salt and pepper together.
4. Gradually add water until desired consistency is reached.
5. Mold this chickpea mixture into small balls.
6. Cook in deep fryer.
7. Your Falafel is now done and ready to be served.
