How I Make Rhubarb Crumble
In the most recent season of Somebody Feed Phil, which was just released last March, Phil traveled to Iceland to showcase the country’s natural beauty and vibrant food culture. I discovered that they have this so-called marriage cake, which is actually a Rhubarb Cake or Rhubarb Crumble.
I got interested so I made a further research about this celebration dessert. I found out that Rhubarb Crumble actually originated in the land of crumbles, which is England. The usual fillings are apple but the addition of rhubarb provides a tart contrast to the dessert.
I got married months ago but that didn’t stopped me from making and trying out Iceland’s marriage cake.
1. Prepare all the ingredients needed.
- 1 cup rolled oats
- 1 cup flour
- 3 tbsp sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cardamom
- 1 tbsp softened butter
- 1 egg
- 1 cup rhubarb jam
2. Traditionally, rhubarb fillings is made from the scratch by cooking rhubarb in sugar. But we don’t have rhubarb stalks in the Philippines so I just looked for a jam. I just blended it until smooth.
3. For the crumble dough, mix rolled oats, flour, sugar, baking soda, salt and cardamom and fold in softened butter.
4. Add the beaten egg.
5. Get a pan and flatten dough at the bottom layer. Leave a small amount of dough for the top layer.
6. Spread rhubarb jam.
7. Scatter pieces of dough on top of the jam.
8. Bake this for twenty minutes at 200 degrees Celsius.
9. Your Rhubarb Crumble is now done and ready to be served.
