Two days from now, on October 14, and on every second Friday of October, we celebrate one of the oldest foods known to man – eggs! It’s worth celebrating, right?
Eggs have played an important role in the lives and health of humans since time out of mind. These little goodies are packed full of protein, and also serve as the base for some of the most wonderful breakfast foods and culinary additions.

We’re starting with the simplest one here. It may look like a plain sunny-side up egg to you but it is actually a French Cloud Egg, where the bright yellow egg yolk is nestled in a fluffy bed of egg white. From France, we’re flying to Korea to taste Korean Steamed Egg, another dish that sounds ordinary. But since this has a Korean touch, this egg isn’t just steamed. Eggs Benedict
There’s another sandwich on the list that is known as a traditional breakfast food by Western people. It is an open-faced sandwich called Eggs Benedict. It consists of an English muffin, cut in half, toasted and topped with bacon, poached eggs and hollandaise sauce. Upon the looks of it, it is already decadent, rich, and satisfying. Aside from Bacon Eggs Benedict, there are more ways to create Eggs Benedict.

Omelette
Omelette is an egg dish that needs no introduction. But since I just want to fill this paragraph, let me discuss about omelette. It is a dish of beaten egg served with savoury toppings or fillings. The image above is a local omelette in the Philippines, which uses uncut eggplant as fillings. Other famous omelettes are Crab Omelette from Thailand, Potato Omelette of Spain and Rolled Omelette of Japan.

Chinese Egg Drop Soup
Most egg dishes uses oil to be cooked. This dish though is different since it uses water to bring out the best of an egg. Chinese Egg Drop is a soup of wispy beaten eggs in chicken broth. It is defined by the thin, silken strands or flakes of cooked egg that float in the soup. It’s a very simple recipe but the final product is heartwarming and luscious. It is definitely a food for the soul.

Shakshouka
This complicatedly named dish best known in Arab and North African countries is my breakfast meal for a few days now. It doesn’t just look good. It also tastes good. It’s a dish of poached eggs in a sauce of tomatoes. It’s just as simple as that and, yet, people get addicted to it. It is said that Shakshouka originated in North Africa after tomatoes were introduced to the region as part of Columbian exchange.

Deviled Eggs
Don’t be scared by out next dish. It just means that this is a hot appetizer. It can be also called stuffed eggs, Russian eggs, curried eggs or dressed eggs. Deviled Eggs are hard boiled, cut in half, and filled with homemade cream that is mixed with the egg yolk. I learned about this through the Lady’s Choice page and so, I recreated their recipe that uses bacon and their mayonnaise.

Salted Egg
When we say egg, we’re not just talking about the white round shell that has fluid inside. It is also salted egg’s day! We celebrate salted egg, especially now that it’s transforming into a trendy flavor to some dishes. An example of this is the Salted Egg Chicken Wings pictured above. But salted egg has become part of Asian cuisine. Its yolks are seasoned to chips and other fried dishes. Or simple, the the sliced ones are topped on salads.

Vietnamese Egg Coffee
Who would have thought that there will be a drink in this list of egg dishes? And of all drinks, it is a coffee drink. I’m talking about the Vietnamese Egg Coffee. Hearing this may make you feel weird but I assure you that the outcome is delicious. The drink is served in cafes throughout Vietnam, originating in Hanoi. It was originally developed when milk was scarce in Vietnam. The taste is so awesome that it is still enjoyed by the locals today.

Filipino Egg Fritters
Finishing up the list with the two street food from our country that gives the flavor of egg at its best. The first type is Kwek Kwek and Tokneneng or Egg Fritters in English term. Kwek Kwek and Tokneneng are famous Filipino street foods that are made out of hard-boiled eggs coated with weird orange batter. The larger ones are called Tokneneng because it uses chicken eggs while Kwek Kwek are the smaller ones as it uses quail eggs.

Balut
I’m sure you’ve heard about Balut since it is a famous exotic food in the Philippines. Many have heard but few have tried since most people find it weird to eat. Balut is a fertilized developing egg embryo that is boiled or steamed and eaten from the shell. It sounded sickening but once you try it, you’re just eating an upgraded and more flavorful version of egg. In this recipe, I tweaked it a little bit and cooked it in coconut milk.
