Arancini – a rice or risotto formed into balls and deep-fried into croquette. I never heard of Arancini until I discovered it on Netflix’s Best Leftovers Ever! when a contestant tried to transform leftover rice to Arancini.
Speaking of leftovers, January is the month when we get a lot of it. We still have remaining food from last Christmas and New Year’s celebrations so I got all I need in our fridge to make Chorizo Pizza Rice Croquettes. I have all four kinds of cheese from last Christmas’ charcuterie board. I have Chorizo from our last time’s grill sesh and I have rice from yesterday’s dinner. There’s no stopping me in making this Italian rice balls.

2. Break down the cooked rice in a bowl.
3. Grate the parmesan, provolone and cheddar in. We’ll save the mozzarella for later.
4. Fry and tear the chorizo sausage apart. If you have ground chorizo, then that’s better.
5. Flavor with tomato sauce, pepper and basil. Mix them all together.
6. Cut mozzarella into small dices.
7. Mold and form rounds of rice balls. Insert mozzarella dice inside.
8. Roll into a plate of flour.
9. Dip into beaten egg.
10. Coat with bread crumbs.
11. Deep fry.
12. Your Arancini is now done and ready to be served.
