How I Make Finnish Salmon Soup
As I continued to watch Netflix’s Somebody Feed Phil and streamed the “Helsinki” episode, I discovered another gem that, I think, I should cook and eat at home. I found out that Finland and other Nordic countries have this amazing soup called Lohikeitto. It’s made with salmon chunks, carrots and potatoes. It’s guaranteed to warm the souls during the Finnish winter days.
There may be no winter in my country but that isn’t stopping me from making this creamy and hearty soup. After all, it’s salmon, one of the most delicious fish on Earth.
Anyway, as I said, I’m trying to create Lohikeitto but, I guess, this will just be a simple creamy salmon soup because I don’t have the other main ingredients of a Lohikeitto like dill and leeks.
1. Hence, these are the ingredients of my creamy salmon soup.
- 1 salmon steak
- 200 grams potatoes
- 1 small carrot
- 1/4 cup spinach
- 250ml cream
- 1 liter water
- Butter
- Onion
- Garlic
- Rosemary
- Parsley
- Salt
- Pepper
2. Remove skin and bones. Slice flesh into chunks.
3. Get the skin and bones and add into a liter of boiling water.
4. While we’re making fish broth, wash and cut the vegetables into dices.
5. Sauté the vegetables using butter.
6. Discard the skin and bones and pour in the fish broth.
7. Season with rosemary, parsley, salt and pepper. Let this simmer.
8. Add the cream.
9. Mix in the sliced salmon and simmer the soup further until the fish is cooked.
10. Remove from heat and top with rosemary and parsley.
11. Your Salmon Soup is now done and ready to be served.
