How To Make Choco Almond Brittles
It’s the 128th day of quarantine period in our region and I’ll be sharing a quick recipe again. I know you are already expecting this because cooking is what I mostly do while I’m locked in our house. Today, we have peanut brittle.
Brittle is a famous confection consisting of flat broken pieces of hard sugar candy embedded with nuts and other stuff. It has many variations around the world. In parts of Middle East, brittle is made with pistachio while many Asian countries use sesame seeds aside from peanuts. We also have peanut brittle in the Philippines and it uses local nuts. We call them Panutsa and we usually see them in Batangas.
We’ve seen many versions but mine is completely different. Instead of the usual caramel, I added chocolate flavoring for the candy. Instead of the usual nuts, I used almonds as fillings. Let’s see how it will turn out.
1. Prepare all the ingredients needed. This includes almonds, sugar, chocolate syrup, salt, vanilla, baking powder and water.
2. Place parchment paper on a baking pan and set it aside.
3. Heat a half cup of water, a half cup of chocolate syrup and a cup of sugar while stirring them.
4. Add a quarter teaspoon of salt and a quarter teaspoon of vanilla and continue stirring.
5. Add a cup of almonds and continue continue cooking on high heat.
6. Turn off the heat and quickly mix three teaspoons of baking powder into it.
7. Pour this mixture on the baking pan with parchment paper and spread evenly.
8. Let it cool until it hardens.
9. Break into brittles.
10. Your Choco Almond Brittles are now done and ready to be eaten.
