It’s the 440th day of quarantine period in our region and honestly, it’s been a long dream of mine to learn how to make Taho, a famous street food in the Philippines, which is made of silken tofu, tapioca pearls and brown sugar syrup.

Taho has been a part of every Filipino’s childhood. Before, it was my coffee every morning. Once I heard the Taho peddler calling outside, I would instantly run outside with a mug ready in one hand and coins on the other to buy this luscious delight.

But did you know that Taho is just a variation of the original tofu pudding? Taho actually got its origins in China and they call this Douhua. Both tofu pudding and sugar syrup are also included in the dessert. We, Filipinos, just added tapioca pearls and we consume it by drinking.

When I was still in college, I was even thinking of hiring a taho vendor just to teach me how it was made. However, of course, I don’t have the guts and the money. Thanks to today’s web! I found a way of having homemade taho. It isn’t the authentic method but at least, it’s similar and easy, too.

1. Prepare all the ingredients needed.

  • 1 liter soya milk
  • 1/2 tablespoons gelatin powder
  • 1/2 kilo brown sugar
  • 1/8 kilo white pearl
  • 1 teaspoon vanilla extract
  • 2 cups water

I prefer using the smallest pearl available in the market. We’ll first boil one liter of water into the rice cooker.

6. When it starts to bubble, pour the raw the tapioca pearl.

7. Stir at first so it won’t stick together.  You can close the rice cooker but check time by time to keep track. Stir if some pearls stick. You’ll know it’s cooked if the color becomes translucent or there are no whites visible.

8. Use a colander to strain the pearl. Do not throw the water as we will use this to make the brown sugar syrup. Wash the pearl.

9. In making the brown sugar syrup, let 1/8 kilo of brown sugar cook on a pan.

10. Add the tapioca water and stir until the sugar melts.

11. Mix in the remaining brown sugar and continue stiring until there are no residues.

12. Add with vanilla extract for extra flavor.

13. Get a mug or cup. Assemble the cooked soya jelly, pearls and brown sugar syrup.

14. Your Taho is now done and ready to be served.
