How To Make Rainbow Crepe Cake

I love crepes and crepe cakes. I love eating them and I have to admit that this beautiful pastry as thin as paper oozing with creaminess is quite hard to resist. But I only enjoy crepe cakes at restaurants and cafes because I stopped making them after the first time I cooked one. I failed my first crepe cake! I couldn’t make crepes as thin as I wanted and when I piled them up, the crepes easily fell. I’m talking about the Nutella Crepe Cake I posted last 2018.

Then, I saw this rainbow crepe cake online and I’m so hooked with it. After a year of waiting, I think it’s time to try again. I really wanted to make this rainbow crepe cake! Therefore, I challenged myself into making another crepe cake. But I only made a mini version so that if I failed again, only few ingredients will go to waste. But after finishing, I can’t believe that I made it! Yay!

 

1. Prepare all the ingredients needed.

  • 80 ml milk
  • 1/2 cup pancake mix
  • butter or oil
  • food color
  • whipped cream
  • vanilla extract

 

2. Make the pancake batter. The instruction says that the pancake mix only needs water. But we’re going to use milk to make the pancake extra creamy in flavor. Since we’re going to make a small crepe cake, we will only need a half cup of pancake mix and 80 millileters of milk.

 

3. I also like a tiny bit of vanilla essence to my crepes.

 

4. Divide batter into six equal parts. The rainbow has seven colors but we’re going to omit indigo.

 

5. Color each batter with the colors of the rainbow. I only have red, yellow, green and blue food colors but that’s alright. All we have to do is to mix and match these colors to make orange and violet.

 

6. Grease your pan with butter or oil and cook the batter on low heat. Make your crepe as thin as possible. The amount of batter we made can create three crepes for each colors.

 

7. After finishing the six colors, start assembling the crepe cake. Spread whipped cream in between crepes. This chocolate whipped cream is ready-made because it’s the leftover from my Chocolate Mousse Granola Parfait.

 

8. Continue this step until you put the last crepe.

 

9. End your crepe cake with more frosting on the side and on top of the cake and drizzle some oreo bits or sprinkles. I actually do this to hide the uneven rounds of crepes.

 

10. Your Rainbow Crepe Cake is now done and ready to be served.
