How I Make Chicken Macaroni Soup

Looking back, I never thought that I’ll take over the position of cook in the family. I just knew how to cook after I graduated in college when we opened a food cart business. But that was just frying eggs and hot dogs. But for the love in food, I eventually got comfortable in the kitchen.

So far, few of the dishes that I’m proud to cook are Bulalo, Salted Egg Chicken Wings and Chicken Macaroni Soup, which are also my family’s favorites. I already shared the first two here so we’ll make the latter today.

Chicken Macaroni Soup, locally called as Sopas, is the Filipino version of Chicken Noodle Soup and the Italian Macaroni Soup. It is regarded as Filipino comfort food, especially during the cold season.

Today, we’ll be using Del Monte Macaroni Pasta. They have their own Chicken Sopas recipe posted on their Kitchenomics page but I’d rather have my own method of making creamy Chicken Macaroni Soup.

1. Prepare all the ingredients needed.

  • 1 chicken breast cut 
  • 4 hot dogs
  • 1 carrot
  • 1/2 cabbage
  • 3 stalks celery
  • 1 Onion
  • 1 Garlic
  • 1 chicken bouillon
  • 400 grams Del Monte Elbow Macaroni
  • 1/2 cup evaporated milk
  • Salt 
  • Pepper
  • Margarine 

2. Boil three cups of water in a pot. Cook the chicken breast.

3. Strain and let the chicken cool. Debone and shred the meat of the chicken.

4. Chop the vegetables. I had mine already cut since it can be bought in the market in this way already. Chop onion and garlic and slice the hot dogs as well.

5. In a pot, saute onion and garlic in margarine.

6. Fry the shredded chicken and sliced hot dogs.

7. Pour in the chicken stock and add the chicken bouillon. Add more water if needed.

8. Put the Del Monte Elbow Macaroni in the pot and let this simmer for ten minutes. I mistakenly bought the Del Monte Salad Macaroni because I wasn’t aware that they have varieties of Macaroni. Anyway, Salad Macaroni for a soup will also work.

9. Place the vegetables in.

10. Pour evaporated milk and cook for another three minutes. Season with salt and pepper.

11. Your Macaroni Chicken Soup is now done and ready to be served.
