How I Make Chinese Chicken Herb Soup
As someone who has Chinese relatives, I got to taste this so called Chinese Herb Soup from time to time. When there’s an occasion, my Chinese aunt serves this as part of their feast and packs a pot for us to take home. Aside from chicken, it also comes in beef or duck.
Actually, this is simply a stew made from boiling meat. But there’s a magic in the Chinese herbs used that makes this broth distinct and more aromatic. The herbs are called Shu Di, Chuan Xiong, Goji Berries and Chinese Black Dates. Just go find these names in Chinese groceries if you want to try this. Since its herbal, this soup is believed to heal mind, body and soul. But for us, we enjoy it as a meal with rice. I just cooked it for lunch and I thought of sharing how it is made.
1. Prepare all the ingredients needed.
- 1 whole chicken, cut into parts
- Shu Di
- Chuan Xiong
- Goji Berries
- Chinese Black Dates
- scallions
- bouillon cube
2. Place chicken cuts and five cups of water into a pot and bring to boil.
3. When it starts boiling, add the herbs – Shu Di, Chuan Xiong, Goji Berries and Chinese Black Dates.
4. Get a small portion of broth and melt the bouillon cube.
5. Transfer and top with sliced scallions.
6. Your Chinese Chicken Herb Soup is now done and ready to be served.
